OVEN FRIED FISH FILLETS | |
1 lb. fresh or frozen fillets of sole or flounder 6 tbsp. pkg. bread crumbs 1/4 c. mayonnaise Paprika 1/2 tsp. salt 1/4 tsp. pepper 1 lemon, quartered Oil a baking cookie sheet. Sprinkle crumbs on wax paper. Spread each fillet thinly on both sides with mayonnaise, then press lightly into the crumbs, coating evenly. Arrange in a single layer on pan. Sprinkle with paprika. Bake in a very hot over (450 degrees) for 8 minutes. Fish is done when the flesh is white and opaque and will flake easily. (Do not over-cook). Sprinkle with salt and pepper, garnish with lemon quarters. |
