CANDIED YAMS 
1 lg. can sugar yams
1/2 stick butter
2 tbsp. sugar
1/2 c. milk
Cinnamon and nutmeg
Marshmallow (large)

Drain juice off yams. Add butter, sugar and milk to mashed yams in medium pot, low fire to mix ingredients. Test for smoothness. Add more milk if needed. Add cinnamon and nutmeg to taste. Pour into baking dish with marshmallows on top and bake until marshmallows are light brown.
