CHEESY POTATOES 
1 (10 lb.) bag potatoes
2 med. or lg. onions
1 lb. bacon
1 lb. Velveeta cheese
Hellmann's mayonnaise

Boil and cut up potatoes. Saute' chopped onions until clear. Set aside. Brown bacon until crisp.

Drain bacon and crumble into bits. Mix potatoes, onion, 3/4 bacon bits, and mayonnaise together. Use enough mayonnaise to coat and moisten potatoes. Cut Velveeta into chunks and mix in. Save some cheese to put on top of mixture. Place in large casserole dish or dishes. Place remaining bacon and cheese on top of mixture. Bake at 350 degrees for 45 minutes.

Recipe makes a large amount. Great for large family get togethers, etc. Recipe can be cut in half for smaller gatherings.
