JAMBALAYA 
1/2 green pepper, chopped
1 lg. onion, chopped
1 tomato, chopped
1 lb. smoked sausage in chunks
2 chicken breasts, halved, cut in chunks
1 can stewed tomatoes
1 1/2 c. stock or broth

Brown chicken. Add sausage, simmer until brown. Add onion, green pepper, simmer several minutes until softened. Add chopped fresh tomato. Add stock and can tomatoes. Season to taste. Cook 25 to 30 minutes. Add 1 1/2 to 2 cups cooked rice.
