ITALIAN BAKED RICE 
1 1/2 c. rice (1/2 c. uncooked)
1/4 c. grated cheese
2 tbsp. chopped pimiento
3/4 c. tomato juice
1 tsp. salt
1/16 tbsp. pepper

Mix ingredients well and pour into baking dish. Cover the top of the dish with the pulp left from straining the tomatoes. Bake for 30 minutes in a moderate (350 degree) oven and serve hot.

SMALL RECIPE:

1/2 c. cooked rice (3 tbsp. uncooked)
1 tbsp. grated cheese
1/2 tbsp. chopped pimiento
1/4 c. tomato juice
1/3 tsp. salt

Prepare same as above.
