RICE PIE (ITALIAN PASTIDE) 
1 c. rice
2 c. water
1 3/4 c. sugar

Cook. Cool. Add 1 small can evaporated milk, 1 small can crushed pineapple, 1 pound Ricotta cheese, 5 eggs.

Mix all ingredients together. Grease a 10 inch pie pan. Pour mix into pan and bake at 325 degrees for 45 to 50 minutes (until firm).
