JOLLOF RICE 
4 c. rice
8 tbsp. vegetable oil
1 onion bulb, chopped
2 lg. tomatoes, 1 can tomato paste
Chicken or beef boiled
Salt to taste
A dash of curry, thyme or other spices of choice

Set rice to boil according to cooking directions for half the given time. In a cooking pot warm vegetables oil, then fry onion, tomato and chicken for 5 minutes. Mix preboiled rice to tomato sauce. Boil on medium heat and add water gradually until rice is cooked to desired tenderness.
