COCONUT ALMOND WAFERS 
1/4 c. shortening
3/4 c. sugar
1 lg. egg
3/4 c. flour
1/4 tsp. salt
3/4 c. shredded coconut
1/4 tsp. almond extract
Sliced, unskinned almonds

Cream shortening. Add sugar and beat until light and fluffy. Beat in egg. Add flour and salt - mix well. Add coconut and flavoring. Roll into small 1 inch balls. Flatten with wet bottom of glass. Put 1 sliced almond in center of each. Bake at 375 degrees for 7 to 8 minutes or until edges are golden. Makes 75.
