ENID'S CHEESE CHOWDER 
1 c. diced celery
1 c. diced carrots
1/2 c. chopped onion
4 med. potatoes
3 c. water
Salt and pepper
1 qt. milk
1/2 c. flour
1 stick butter
1 lb. cubed Velveeta cheese
1 lb. cubed ham

Put some of the milk with the flour and blend well. Put milk, butter and flour mixture in a large saucepan. Cook over low heat, stirring constantly. When sauce comes to a boil, add cheese and stir until cheese is melted. When vegetables are tender (do not drain), add cheese sauce and ham. Simmer 15-20 minutes.
