POTTAGE (STRAWBERRY SOUP) | |
1 pkg. strawberries 1 tbsp. sugar 1 tsp. lemon juice 1 tsp. butter 1 c. water 2 tsp. cornstarch 1 tbsp. water 1 pt. half and half In a saucepan heat strawberries, sugar, lemon juice, butter and 1 cup water. In a cup mix cornstarch with 1 tablespoons water. In a cup mix cornstarch with 1 tablespoons water continue stirring as you blend into the hot strawberry mix bringing it to a boil. Continue stirring as you boil for about one minute, and then remove from heat. Cool slightly and then put the mixture in a blender or processor, blend until the strawberries are pureed. Meanwhile, heat half and half but do not boil. Mix strawberry mixture and warm half and half. Cool and then chill. |
