ZUCCHINI CAKE | |
1 1/2 c. vegetable oil 2 c. sugar 4 eggs, well beaten 2 c. flour 2 tsp. baking soda 2 tsp. cinnamon 2 tsp. baking powder 1 c. chopped nuts 3 c. grated zucchini (wring out extra juice) 1 c. raisins 1 c. coconut Mix together oil and sugar. Add eggs, beating well. Sift together dry ingredients; add slowly to egg mixture until well blended. Fold in remaining ingredients. Bake in greased and floured 9 x 13 inch pan. Bake at 325 degrees for 60 minutes. Frost with cream cheese frosting. |
