ZUCCHINI FRUIT CAKE 
3 eggs
1 c. cooking oil
2 c. sugar
3 tsp. cinnamon
1 1/2 tsp. nutmeg
2 tbsp. allspice
2 c. grated zucchini, well drained
1 c. chopped walnuts
1 c. light raisins
1 c. mixed candied fruit
1/2 c. currants
1 tsp. vanilla
3 c. all-purpose flour
1 tsp. baking soda
1 tsp. salt
1/4 tsp. baking powder

Preheat oven to 350 degrees. Beat eggs with oil. Stir in sugar and vanilla. Sift together flour, soda, salt, baking powder and allspice. Add to egg mixture. Stir in zucchini, nuts, raisins, fruit and currants.

Spread in 2 greased and floured 9 x 5 inch loaf pans. Bake 1 hour and 20 minutes or until done. Cool in pans 15 minutes. Turn out on wire rack and cool. When cold wrap in foil and store in airtight container.
