FRUIT COCKTAIL CAKE 
2 c. all-purpose flour
1 tsp. baking powder
1 tsp. baking soda
1 tsp. grated orange rind
1/2 c. cooking oil or butter
1 1/2 c. sugar
2 eggs, beaten
2 tbsp. plain yogurt
8 oz. fruit cocktail with liquid
1/2 c. chopped walnuts, optional
Vanilla Sauce (recipe follows)

Preheat oven to 350 degrees. Grease a 9 x 12-inch oblong pan. Sift flour, baking powder, soda, salt, and rind.

Combine oil, sugar, eggs, and yogurt. Beat for 1 minute with electric mixer at moderate speed. Add dry ingredients gradually and beat another 1 minute. Stir in fruit cocktail and nuts. Mix well.

Pour into prepared pan. Bake at 350 degrees for 25-35 minutes. Pour hot Vanilla Sauce over the cake.

VANILLA SAUCE:

1/2 c. sugar
1/2 c. butter
1 tbsp. vanilla liqueur
1 tsp. vanilla extract

Mix all ingredients in a saucepan. Bring to a boil, stir and pour over Fruit Cocktail Cake.
