BURNT CREAM FROM SIMON AND
SEAFORTS
 
1 pt. whipping cream
4 egg yolks
1/4 c. sugar
1 tbsp. vanilla

TOPPING:

4 tbsp. sugar
1 tsp. brown sugar

Preheat oven to 350 degrees. Heat cream over low heat until bubbles form around edge of the pan. Beat egg yolks and sugar until thick. Gradually beat cream into egg yolks. Stir in vanilla and pour into custard cups. Place cups in baking pan that has 1/4 inch water in bottom. Bake until set, approximately 45 minutes.

Remove from water and chill. Sprinkle each cup with 2 teaspoons sugar mixture. Place under broiler until brown. Chill before serving.
