BROILED CHICKEN 
2 (2 lbs.) broiler chickens, split in half

Brush with melted butter and season. Place, skin side down, on broiler pan (no rack). Broil 5 to 7 inches from heat for 25 minutes or until lightly browned. Brush occasionally with melted butter. Turn; broil 15 to 20 minutes longer. About 5 minutes before end of cooking time, place pineapple rings and peach halves beside chicken. Brush chicken and fruit with pineapple sauce (recipe following). Broil 5 minutes. Pass the sauce.

Pineapple Sauce: Melt 1/2 cup butter; blend in 1 teaspoon cornstarch. Add 1 teaspoon grated lemon peel, 1/4 cup lemon juice, 1/3 cup pineapple syrup, 2 tablespoons finely chopped onion, 1 teaspoon soy sauce, and 1/4 teaspoon thyme. Cook 5 minutes over low heat, stirring constantly.
