MARYLAND CRAB MEAT ROYALE 
1 lb. Maryland crab meat (or king crab)
1/2 c. chopped mushrooms
1/2 c. butter (1/2 stick)
1 tbsp. chopped onions
1 sm. bell pepper, chopped
1 tsp. Worcestershire sauce
1/4 c. dry sherry
2 tbsp. flour
1 c. skimmed milk (or otherwise)
Salt & pepper to taste
Grated cheese topping
Croustades (small pastry cases - can be purchased in gourmet stores)

In a large frying pan melt butter, add mushrooms, onion, pepper, sherry - cook briefly; then make a paste of flour and milk. Add to other above ingredients. Add crab meat and cook until sauce thickens. Add salt and pepper.

Place croustades on a cookie sheet and fill with crab meat mixture, topping the croustades with grated cheese. Bake in 350 degree oven until cheese melts and is bubbly.
