CHEROKEE CASSEROLE 
1 lb. ground beef
3/4 c. chopped onion
1 1/2 tsp. salt
Dash of pepper
1/4 tsp. each garlic powder, thyme, and oregano
1 (1 lb.) can tomatoes
1 (10 1/2 oz.) can mushroom soup
1 c. minute rice
1 c. grated Cheddar cheese

Brown meat; add onions. Cook until tender; stir in ingredients in order given, except cheese. Bring to a boil. Reduce heat and simmer 5 minutes, stirring occasionally. Spoon in baking dish. Top with cheese. Bake until cheese is melted. Serves 4 to 6.

About 50 years ago a student at UC Santa Cruz gave me this recipe. I have been making it for 50 years. My husband loves it and calls this comfort food. Today I made this for dinner and my husband said why don't you google "Cherokee casserole" and see if it's out there. What a surprise when I found it. I use stewed tomatoes with herbs. Delicious!
