CHEROKEE CASSEROLE 
1 lb. ground beef
1 tsp. olive oil
3/4 c. finely chopped onion
1 1/2 tbsp. salt
Dash of pepper
1/8 tsp. each garlic, salt, thyme & oregano
1 c. minute rice
1/2 sm. bay leaf
1 can (1 lb.) tomatoes
1 can condensed mushroom soup
6 stuffed olives, sliced
2-3 slices American cheese, cut in pieces

Brown meat in olive oil. Add onions; cook until tender. Stir ingredients in order given, except 3 of the olives and cheese. Bring to a boil, reduce heat and simmer 5 minutes, stirring occasionally. Spoon into baking dish, removing bay leaf, top with cheese. Broil until melted, garnish with olives. Serves 4-6.
