BROCCOLI CASSEROLE 
1 tbsp. minced onion
1 can cream of celery soup
2 eggs, beaten
1 c. mayonnaise
1 c. grated Parmesan or cheddar cheese
Salt & Pepper to taste
2 (10 oz.) pkgs. frozen broccoli, cooked 5 minutes & drained
1 tube Ritz crackers, melted to moisten

Mix everything but the crackers and butter. Mix well. Pour into casserole dish. Put crumbs over, pouring melted butter on top of crumbs. Cover and bake at 350 degrees for 40 to 45 minutes. Serves 8 to 10. Can also be frozen and reheated and prepared a few days earlier.
