GREEN BEAN SOUP 
Tastes rich, but is low fat and low calorie.

1 1/2 lbs. green beans, cleaned
2 c. chicken broth or bouillon
1 c. water
3 green onions, trimmed and coarsely chopped, including tops
1/2 tsp. salt
1/4 c. heavy cream
1/2 c. yogurt
Fresh ground pepper (white looks better than black)
Dash of vinegar (optional)
Toasted sliced almonds for garnish

1. In a large pan combine beans, half the stock, the water, onions and salt. Bring to a boil, then simmer covered for about 10 minutes or until beans are tender. (Do not overcook -- will taste like canned beans.)

2. Puree mixture in a food processor. Add remaining ingredients except almonds. Cover and refrigerate overnight.

3. Taste to correct seasoning. Serve in chilled bowls with almond garnish. Serves 6-8.
