BRAN MUFFINS (MADE IN ADVANCE) 
1 1/2 c. sugar
1/2 c. vegetable oil
2 eggs
2 c. buttermilk
1 c. bran buds
1 c. boiling water
2 1/2 c. flour
2 1/2 tsp. baking soda
1/2 tsp. salt
2 c. All Bran
Raisins and or dates

Mix together sugar, oil, eggs, buttermilk. Sift flour, soda, salt, add to above mixture. Add All Bran, buds, raisin and or dates and 1 cup boiling water. Mix well. Place in covered container and let set overnight in refrigerator. Bake in greased muffin pans at 400 degrees for 20 to 25 minutes. You can bake as many as you want at one time and refrigerate rest of batter for up to 2 weeks. I use the dry cultured buttermilk. Makes at least 2 1/2 dozen.
