CREAM OF ASPARAGUS SOUP 
1 1/2 tbsp. butter
1/4 c. chopped green onion
1 lb. asparagus spears, cut in 1/2 inch pieces
1 c. Half & Half or non - fat yogurt
1/4 tsp. salt and pepper
2 c. chicken broth

Combine butter and green onion in 3 quart microwave casserole. Microwave on High 2 minutes. Stir asparagus into casserole. Cover with lid or plastic wrap, vented and microwave on High 5 to 7 minutes, stirring once. Puree mixture in blender and return to casserole. Stir in chicken broth and Half & Half. Add salt and pepper. Cover and microwave on High 8 to 10 minutes or until hot but not boiling, stirring once. Serve.

Since microwave ovens vary in power, you may need to adjust your cooking time.
