PIMENTO SANDWICH FILLING 
1 jar (3 1/2 oz.) chopped pimentos
12 oz. sharp Cheddar cheese
1/2 small onion
1 c. mayonnaise

Strain juice from pimentos. Grate cheese and place in mixing bowl. Mince onion and add to bowl. Add mayonnaise and pimentos and mix well. Cover with plastic wrap and refrigerate 30 minutes before using.

This allows flavors to blend. Soften at room temperature and spread on bread. Great on crackers for a snack.
