CUCUMBER SANDWICH FILLING 
1 lg. cucumber
1 tsp. salt
1/2 sm. onion
1 (8 oz.) pkg. cream cheese

Peel cucumber and cut in half lengthwise. Scoop out seeds and throw away. Slice cucumbers as thin as possible and place into mixing bowl. Sprinkle with salt and let stand 20 minutes (salt helps to draw out the water).

Mince onion and place in another mixing bowl. Add cream cheese and mix together. Drain water from cucumbers, use paper towels to press down on cucumbers and dry further.

Add cucumbers to cream cheese and stir together. Cover with plastic wrap and refrigerate 30 minutes before using. This allows flavors to blend. Soften at room temperature and spread on bread to serve.
