STUFFED SPINACH SHELLS 
24 jumbo shells
1 (32 oz.) jar spaghetti sauce (or homemade sauce)
1 (10 oz.) box frozen spinach, thawed & drained
2 c. ricotta or cottage cheese
2 c. shredded Mozzarella cheese
1 sm. onion, diced
1/2 c. grated Parmesan cheese
2 tbsp. chopped parsley
1 tsp. dry oregano
1/4 c. more Parmesan for top

Cook shells and drain; set aside. Spoon 1/4 jar of sauce on bottom of 13"x9"x2" pan.

Combine next 8 ingredients; mix well.

Stuff shells with large spoon of spinach mixture. Place in pan of sauce and spoon over remaining sauce. Top with Parmesan cheese. Bake at 350 degrees for 30 to 40 minutes.
