MISS MATTIE'S HOMEMADE ROLLS 
1 c. milk
1/4 c. sugar
1 egg
1/4 c. water
3 to 4 c. flour
1 tbsp. yeast
1 tsp. salt
1/4 c. shortening

Scald milk, add salt, sugar and shortening. Let cool to approximately 110 degrees (a warm comfortable temperature to your skin). Beat in 1 1/2 cups flour, 1 egg and yeast which has been softened in hot water. Grease a large container well and put dough in, turning to grease all sides. Cover and place in warm area until doubled in size (Punch finger into dough, if dent remains it's ready.). Grease pans, shape dough into rolls and let rise again until doubled. Bake at 400 degrees until golden brown.
