ZUCCHINI CASSEROLE 
2 lbs. zucchini
1 (10 oz.) pkg. frozen chopped spinach
1/4 lb. cheddar cheese, cubed, can use more cheese
2 cloves garlic, chopped or garlic powder
2 to 3 slices of bread, broken up
2 eggs
2 tbsp. salad oil
Salt & pepper

Cook vegetables until half done. Mash the zucchini and combine with other ingredients. Bake 30 minutes at 350 degrees. Amount of bread depends on the moistness of vegetable mixture.
