SPINACH CASSEROLE 
1 pkg. frozen chopped spinach
2 eggs, beaten
1/2 c. mayonnaise, Hellman's
1 c. mushroom soup
1 c. grated cheddar cheese
2 tbsp. grated onion
Salt and pepper

Cook vegetables 5 minutes and drain. Mix all other ingredients. Fold into vegetables. Put in 1 1/2 quart casserole, sprayed. Top with crushed Ritz crackers. Bake at 350 degrees for 1/2 to 1 hour. Serves 4 to 6.
