BBQ GINGER-PINEAPPLE BABY BACK

2 slabs pork ribs
water

GINGER-PINEAPPLE SAUCE:

1 cup barbecue sauce (I use K.C. Masterpiece)
1/2 cup crushed pineapple
1/4 cup soy sauce
1/4 cup dry sherry
1/4 cup honey
1 tbsp. sesame oil
1 tbsp. finely chopped fresh ginger

Preheat oven to 400°F. Place ribs in 2 large shallow pans and add 1/2-inch water. Seal tightly with foil and bake at 400°F for 1 hour.

Meanwhile combine sauce ingredients in a small saucepan. Cover and simmer for 10 minutes.

Remove ribs from oven and carefully remove from pans; place on a grill over medium heat. Grill for 20 to 30 minutes, turning and brushing with sauce frequently, until ribs are lightly charred and coated with sauce.

Makes 8 servings.
