CINNAMON RED HOT PICKLES 
8 lb. cucumbers (use the large ones that we usually toss out)
1 c. lime
1 bottle red food coloring (small)
2 c. apple cider vinegar
1 (15 oz.) pkg. cinnamon Red Hot candies
1 c. vinegar
1 tbsp. alum
8 cinnamon sticks
8 c. sugar

Peel and seed cucumbers. Slice 1/4-inch thick or cut in strips. Soak in 1 cup lime and 1 gallon water for 24 hours. Wash. Soak in ice water for 3 hours. Drain. Mix 1 cup vinegar, food coloring and alum with enough water to cover. Pour over cucumbers and simmer for 2 hours. Pour off. Bring to boil 2 cups vinegar, 2 cups water, sugar, cinnamon sticks and Red Hot candy. Boil until candy is melted. Pour over cucumbers and let stand 24 hours. After 24 hours, pour the liquid into a boiler and bring to a boil. Pack cucumbers into jars. Pour hot mixture over and seal. You can add to or take away from the 24 hour soaks so that you won't be up at midnight! These look like jewels in the jar or on a glass serving dish. They are so pretty on a Christmas buffet!
