MOCK APPLE CINNAMON RINGS 
15 to 20 lg. cucumbers (or 2 gal.)
2 c. pickling lime
8 1/2 qts. water
2 c. "red hots" (hot cinnamon candies)
2 c. water

Select cucumbers that are on the verge of turning yellow. Peel, core the seedy centers, then slice the cucumbers into 1/4 to 1/2 inch thick rings.

Mix pickling lime in the 8 1/2 quarts water. Soak cucumber rings in solution overnight.

Meanwhile, mix cinnamon candies with the 2 cups water. Let stand overnight to dissolve.

Drain the lime soaked cucumber rings. Rinse, then soak in clear water for 3 hours.

Make a solution by simmering the following together: 3 oz. red food coloring 8 1/2 qts. water

Pour the vinegar solution over the drained cucumbers. Let sit for 2 hours. Drain and discard solution.

Make a syrup by boiling the following together, stirring to prevent sticking and scorching: 10 to 15 c. sugar 6 sticks cinnamon, broken into pieces Cinnamon candy solution

Pour syrup over cucumber rings and let stand 1 day.

Pour off syrup and reheat. Pour while hot over rings. Let stand one day. Pour off syrup and reheat. Pour while hot over rings. Let stand another day.

On the third day, pour off the syrup and reheat it to boiling.

Pack the cucumber rings in hot sterile jars, pour hot syrup over them and seal the jars. If you are short of syrup to cover the cucumbers in the jars, prepare a little more.
