ZUCCHINI CASSEROLE 
1 1/2 c. grated zucchini
1 1/2 c. coarse cracker crumbs
1 egg
1/4 c. milk
2 tbsp. dried minced onion or 1/2 c. grated onion
1 sm. can stems and pieces mushrooms, use liquid too
1 c. shredded cheddar cheese
1 sm. can whole kernel corn, optional

Mix together. Butter generously. Bake 1 hour at 350 degrees in 9x13 pan.
