ZUCCHINI CASSEROLE | |
1 lb. green zucchini 3 average sized onions 2 cloves garlic 1 (16 oz.) can creamed corn 1 (4 oz.) can mushrooms 1 1/2 lb. ground lamb 1/4 lb. shredded Cheddar or American cheese 1/2 c. bread crumbs Slice zucchini into casserole dish, layered on the bottom, then layer the sauteed onion with garlic and mushrooms, then a layer of creamed corn. Pre-fry lamb until only a tinge of red appears and layer next, pouring off excess fat. Next, the shredded cheese and lastly the bread crumbs. Bake for 1 hour at 375 degrees. |
