NUTTY BANANA BREAD 
2 c. sugar
1 c. butter, melted
4 eggs
4 c. flour
2 tsp. baking powder
2 tsp. baking soda
1/8 tsp. salt
1 tsp. cinnamon
1/2 tsp. nutmeg
2 c. pecans, chopped
8 to 10 very, very ripe bananas

Peel bananas and place in bowl. With a fork, mash bananas well and set aside. (The secret to really good banana bread is extremely ripe bananas.)

Cream the sugar and butter together with mixer on low speed. Add eggs to the cream mixture. Beat on low 1 minute and add bananas and salt. Continue to beat for 1 minute. Add baking powder to flour and gradually add flour into mixture, beating constantly on medium for 5 minutes. Add cinnamon and nutmeg. Pour nuts into mixture and beat well for 2 minutes.

Take the baking soda and place in small cup. Add 1 teaspoon water and stir. Pour this into the mixture and blend well. Preheat oven to 325 degrees. Spray flour large loaf pans or 8 small loaf pans with cooking spray. Divide mixture evenly between loaf pans. Place in oven and bake for approximately 50 minutes. Test with a toothpick to see if center of bread is done.
