POTATO BREAD 
2 c. mashed potatoes
1 1/2 c. milk
1/3 c. butter
2 tbsp. honey
2 tsp. salt
2 pkgs. active dry yeast
1/2 c. warm water (110 degrees)
2 eggs
About 5 c. flour

Slowly stir in milk, butter, honey, and salt to warm mashed potatoes (110 degrees). In a large bowl, mix yeast with water. Let stand 5 minutes. Combine potato mixture, eggs and 3 cups flour. Gradually mix in 3 1/2 cups more flour. Turn out on floured board and knead for about 10 minutes or until smooth and elastic. Add more flour if needed.

Cover, let rise 2 1/2 hours or until about doubled. Punch down dough and divide into 3 pieces. Shape into loaves. Place in well greased pans. Cover, let rise until almost doubled (about 35-40 minutes). Bake in 350 degree oven about 35-40 minutes or until loaves sound hollow when tapped on. Turn out of pans. Cool on rack. Diabetic exchange - 1 serving = 1 bread, 26 calories. 80 mg sodium, 12 mg cholesterol, 15 gm carbohydrates, 2 gm fat, 2 gm protein.
