POTATO BREAD 
2 c. mashed potatoes
1 1/2 c. warm milk
1/3 c. butter
2 tbsp. honey
1 tsp. salt
2 pkgs. dry yeast
1/2 c. warm water
2 eggs
About 8 c. flour

Peel and boil potatoes until tender; drain and mash. Slowly stir in warm milk, butter, honey and salt. If necessary heat until 110 degrees.

Meanwhile, in large bowl, mix yeast with warm water; let stand 5 minutes.

Combine potato mixture, eggs and 3 cups flour. Gradually mix 3 1/2 cups more flour. Knead until smooth and elastic, adding more flour as needed.

Place dough in greased bowl; turn to greased top. Cover, let rise in warm place until doubled, about 1 1/2 to 2 1/2 hours. Punch down dough, divide in thirds. Shape each portion into a smooth loaf. Place in 3 well greased 9x5 inch bread pans. Cover, let rise in warm place about 30 to 40 minutes. Bake at 350 degrees for 35 to 45 minutes.
