SWEET POTATO BREAD 
3 1/2 c. flour
1 1/2 c. sugar
2 tsp. baking powder
2 tsp. baking soda
1 tsp. cinnamon
3/4 c. oil
1/3 c. water (or less)
4 eggs
2 c. cooked sweet potatoes, mashed
2 c. nuts &/or raisins

Cream oil, sugar and egg. Add dry ingredients and mix. Add the sweet potatoes and water; mix thoroughly. Add nuts/raisins. This is enough batter for three 1 pound coffee cans, or 2 loaf pans. The pans should be greased and floured or use Pam for fewer calories. Bake at 350 degrees for 1 hour. Can be frozen.
