SWEET POTATO NUT BREAD 
1/2 c. butter
1/2 c. shortening
2 2/3 c. sugar
4 eggs
2 c. cold, mashed sweet potatoes
3 1/2 c. flour, sifted
1 tsp. salt
1 tsp. cinnamon
1 1/2 tsp. nutmeg
2 tsp. baking soda
1 c. chopped walnuts
2/3 c. cold, strong black coffee

Cream first 3 ingredients. Add eggs, 1 at a time. Blend in sweet potatoes; mix well. Sift together dry ingredients. Add nuts. Stir into creamed mixture alternately with cold coffee. Pour batter into 3 (8"x4") loaf pans and bake at 375 degrees for 50 to 60 minutes. Cool 10 minutes. Remove from pans and cool completely, then wrap and let stand 18 to 24 hours to mellow.
