HALIBUT AU GRATIN | |
1 lb. halibut 1 onion, sliced 1/2 tsp. chervil 1/4 tsp. rosemary, crumbled 1/4 c. butter 1/4 c. flour 1 c. milk 1 c. grated Monterey Jack cheese 1/2 tsp. salt 1/2 c. soft bread crumbs 1 tbsp. butter 1/3 c. grated Parmesan Place fish in shallow casserole dish. Top with onion chervil and rosemary. Cover with lid or foil and bake in 350 degree oven for 20 minutes. Drain, reserving liquid, 1/4 cup. Cut fish into large cubes. In saucepan melt butter and blend in flour. Stir in milk and reserved fish liquid. Heat, stirring constantly, until sauce boils and thickens. Stir in cheeses and salt. Add fish. Turn into 4 individual ramekins. Toss crumbs with butter. Sprinkle over fish along side of ramekin. Bake, uncovered in 375 degree oven about 20 minutes. Serves 4. |
