CHEWY OATMEAL CRAISIN COOKIES 
In all of my 55 years, these are absolutely THE BEST oatmeal cookies I have ever had - definitely will win over those who aren't particularly fond of oatmeal cookies!

1 1/2 cups old-fashioned rolled oats
1/2 cup unbleached flour
1/2 cup Craisins (or other dried cranberries)
1/2 tsp. baking soda
1/2 tsp. salt
6 tsp. butter, at room temperature
1/2 cup dark brown sugar, packed
1/4 cup pure cane granulated sugar
1 large egg
1 tsp. vanilla extract

Preheat oven to 350°F.

Mix oats, flour, Craisins and baking soda together in a bowl.

In a separate mixer bowl, cream butter and sugars 'till smooth (make sure to scrape sides of bowl) then add egg and vanilla. Mix well, then add in dry mixture slowly 'till just combined. Drop by spoonsful onto ungreased cookie sheets, about 2-inches apart, as these spread.

Bake at 350°F for about 15 minutes, or until golden brown but still soft.

Note: When you take these out, you MUST let them cool for a few minutes before attempting to get them off the cookie sheet!

Remove to cooling racks to cool completely.
