SALMON LOAF | |
1 (16 oz.) salmon 1 tbsp. onion, chopped 1 c. cold mashed potatoes Salt & pepper to taste 1 egg, beaten 1 qt. tomatoes, drained 20 crackers, crushed Remove bones and skin from salmon and mix with juice of salmon. Mix rest of ingredients (except tomatoes) and form into a loaf. Cover the top with tomatoes (but add 1 tomato into the mixture). Place on foil in baking dish and bake at 400 degrees for 45 minutes or until brown. Cool 5 minutes and slice. |
