SALMON LOAF 
1 can salmon
1 c. bread crumbs
1 c. mashed potatoes
2 eggs
2 tsp. parsley
1 sm. onion, chopped fine

Mix all ingredients together. Shape into loaf. Bake in slow oven (350 degrees) for about 1 hour. Serve with Egg Sauce.

EGG SAUCE:

1 c. milk
1 tsp. mustard (not dry, prepared)
2 tbsp. butter
Flour

Combine ingredients adding enough flour to make creamy paste like white sauce. After sauce is done, chop 1 hard boiled egg into sauce. Serve over salmon loaf.
