CHILI CHEESE BITES 
4 tbsp. butter
5 eggs
1/4 c. flour
1/2 tsp. baking powder
Dash salt
1 (4 oz.) can chopped green chilies
1/2 pt. sm. curd cottage cheese
2 c. shredded Monterey Jack cheese

Preheat oven to 400 degrees. Melt butter in 9" square pan in oven. Tip pan to coat bottom of pan with butter. In large bowl, beat eggs. Stir in flour, baking powder and salt. Add melted butter, set pan aside. Stir in chilies, cottage cheese and Monterey Jack cheese. Mix until blended. Turn batter into buttered pan. Bake 15 minutes. Reduce heat to 350 degrees, bake 30 to 35 minutes or until lightly browned. Cool slightly and cut into small squares. Freezes well. May be doubled using 13"x9" pan.

I double the recipe (use a 9 X 13 pan) and I use half Monterey Jack and half Pepper Jack. Gives the recipe a little kick.

This one of my kids favorites! I double the recipe and use a brick of Pepper Jack and a brick of Swiss. YUM :)
