SQUASH CASSEROLE 
2 c. cooked squash, zucchini or yellow crookneck
1 med. onion
1 carrot, grated
1 can cream of chicken soup
1 sm. jar pimentos
3/4 stick butter
3/4 pkg. Pepperidge Farm dressing crumbs

Mix together squash, onion, carrot, soup, and pimentos. Add half of butter and a little more than half of stuffing. Melt rest of butter in pan and add rest of stuffing. Stir and put on top of dish. Bake in 350 degree oven for 30-45 minutes or until hot.
