DUTCH VEGETABLE WHIP | |
3 c. diced potatoes 1 c. diced carrots 1 peeled, sliced apple 1/2 onion, sliced 1 tsp. salt 1/8 tsp. pepper Put rack and 1 cup water in pressure cooker (potatoes, carrots, apple). Cook 3 minutes at 15 pounds pressure. Cool cooker at once. Drain and mash. Add 2 tablespoons butter and sprinkle with parsley. |
