ECKRICH OCTOBER FEAST | |
3 med. potatoes, cooked 1/4 c. chopped onion 1/4 c. butter 1/4 c. + 2 tbsp. flour 1/2 tsp. salt 1/4 tsp. pepper 1/4 tsp. thyme 2 c. milk 1/2 lb. smoked sausage, sliced thin 1 c. frozen peas, rinsed & drained 3 tbsp. bread crumbs 1 tbsp. melted butter Pare and slice potatoes to equal 2 cups. Cook onion in butter. Blend in flour and seasonings. Gradually add milk, stirring until smooth. Cook, stirring constantly until slightly thickened. Layer sausage, potatoes, peas, sauce. Repeat layers, ending with sauce. Combine bread crumbs and butter. Sprinkle over sauce. Bake at 350 degrees for 20 to 30 minutes. Use 2 quart dish. Serves 4. |
