RECIPE COLLECTION
“SHRIMP SCAMPI” IS IN:

SHRIMP SCAMPI
24 large uncooked shrimp (peeled, deveined, leaving tails on)
4 large garlic cloves, finely minced
1/4 cup (1/2 stick) butter
1/2 cup olive oil
1 cup white wine
1 tbsp. chopped parsley
Lemon wedges
bread crumbs

In a skillet, sauté a few spoons of bread crumbs, parsley and garlic in a little olive oil and butter until lightly browned. (Add garlic after a few moments so that it doesn't get brown.)

Cooks Note: Combine 1/2 cup olive oil (does not need to be extra virgin), white wine, parsley and lemon juice to make marinade. Marinate shrimp for 15-30 minutes before cooking.

Add shrimp, marinade and juice from a couple of lemon wedges and cook until shrimp are pink (a few minutes) and juices in pan are bubbling hot.

Serve shrimp with scampi sauce for dipping, and garnish with lemon wedges.

Just made this for dinner. Everyone liked the flavor, even my 8 year old. I'll add to my recipe box and make again.

Made today. It was amazing. I added old bay seasoning while marinating. Per a previous post. I will make this again without a doubt

I agree -- easy, basic, good. Didn't have parsley, so substituted with fresh chives. Worked well.

I've made this about 20 times. My kids favorite dinner. So simple to make. Add red pepper flakes for a little kick.

This is a great tasting shrimp scampi, my only complaint is that there's nothing about how long to cook them. My husband liked the lemon taste.
