REFRIGERATOR ROLLS 
1/2 c. sugar
2/3 c. shortening
1/2 c. lukewarm water
1 yeast cake
2 eggs
1 tsp. salt
1 c. mashed potatoes
1 c. scalded milk

Mash potatoes. Add shortening, sugar, salt and eggs. Cream well. Dissolve yeast in lukewarm water and add to lukewarm milk, then add to potato mixture. Add sifted flour to make a stiff dough. Toss on floured board and knead well. Put into a large bowl and let rise double in bulk. Knead slightly. Rub over top with melted butter; place in casserole. Cover tightly and place in refrigerator cabinet until ready to bake.

About 1 hour before baking time, pinch off dough. Shape into rolls as desired. Cover and let rise until light. Preheat oven to 400°F.

Bake at 400°F for 12 to 20 minutes.
