SAUSAGE BAKED WITH SWEET
POTATOES & APPLES
 
8 lg. sweet potatoes
2 lbs. sausage meat
8 lg. apples
Salt
Light brown sugar
Milk

Drop sweet potatoes in boiling water to cover. Cook, covered until tender, about 25 minutes. Drain well and cool enough to be handled. Peel and cut into thin slices.

Preheat oven to 350 degrees.

Grease a 2 1/2 quart casserole dish. Cover the bottom with half the sweet potatoes.

Shape sausage into 8 flat cakes and brown lightly in a skillet. Drain on paper towels.

Pare apples and cut into thick slices.

Place meat cakes on sweet potatoes in casserole and cover with all the apples. Sprinkle lightly with salt and brown sugar.

Place remaining sweet potatoes over the apples. Brush with milk and sprinkle with brown sugar. Bake 45 minutes. Makes 8 servings.
