10 sweet Italian sausage links
6 medium Russet potatoes
2 large green bell peppers
1/2 cup olive oil
2 (1 1/4 oz. ea.) envelopes onion soup mix

Preheat oven to 350°F.

Cut sausages, potatoes, and peppers into large chunks. Pour in onion soup mix and olive oil; toss until all ingredients are well-coated.

Transfer to a large roasting pan and bake at 350°F for 2 to 3 hours, making sure to mix every half hour. (Sausage and potatoes will have a deep brown color when done).

Serves 6 to 8.
